  • 3/4 cup reduced-fat Greek yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic minced
  • 1 medium cucumber diced
  • 4 cups shredded rotisserie chicken
  • 6 cherry tomatoes quartered
  • 1/2 medium onion diced
  • 3 oz feta cheese crumbled
  • 1/4 cup chopped Kalamata olives
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh parsley chopped
  • Kosher salt to taste
  • 6 pitas for serving

Instructions

  • 1- Heat olive oil in a grill pan or skillet over medium-high heat. Season the chicken breasts with dried oregano, salt, and pepper. Grill the chicken for 5-7 minutes on each side until fully cooked and internal temperature reaches 165°F (74°C). Let it rest for a few minutes, then slice into strips.
  • 2- In a large bowl, combine the romaine lettuce, cherry tomatoes, red onion, cucumber slices, and Kalamata olives. Drizzle the Greek salad dressing over the top and toss to coat all the ingredients evenly.
  • 3- Place the grilled chicken strips over the tossed salad. Spoon dollops of the chilled tzatziki over the salad and chicken. Sprinkle crumbled feta cheese and some extra chopped fresh dill over the salad.

Notes

  1. Season to Taste: Adjust the amount of salt, pepper, and tzatziki according to your preferences.
  2. Vegetarian Adaptation: Swap the chicken for grilled halloumi cheese or chickpeas to make this dish vegetarian.
  3. Serving Suggestion: For an extra burst of freshness, sprinkle chopped fresh dill over the salad before serving.
  4. Make Ahead: Prepare the chicken and chop the vegetables ahead of time for a quick assembly when you’re ready to eat.
