Slice the ripe bananas into ½-inch thick rounds.
Lay out a parchment paper-lined baking sheet.
Spread a small amount of peanut butter on top of each banana slice.
Place the banana slices on the baking sheet and freeze for about 30 minutes.
In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
Once the banana slices are frozen, dip each slice into the melted chocolate, coating it completely.
Place the chocolate-covered banana bites back onto the parchment paper.
Freeze again for about 30 minutes to let the chocolate harden.
