Prepare the Cheesecake Filling
In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, and heavy cream. Use a hand mixer or whisk to beat the mixture until smooth and creamy.
Add ¼ tsp of cinnamon if desired for extra flavor. Set aside.
Prepare the Strawberry Filling
In a small bowl, mix diced strawberries with 2 tbsp of granulated sugar. Stir well and let sit for about 10 minutes to release their juices.
Assemble the Sandwiches
Lay out 4 slices of bread. Spread a generous amount of the cheesecake filling onto each slice.
Top with a spoonful of the sugared strawberries.
Place the remaining 4 slices of bread on top to form sandwiches.
Lightly butter the outside of each sandwich to help them crisp up during frying.
Fry the Sandwiches
Heat 2 cups of vegetable oil in a large skillet over medium heat, aiming for 350°F (175°C).
Test the oil by dropping in a small piece of bread—if it sizzles immediately, it’s ready.
Carefully place the sandwiches in the hot oil. Fry for 2–3 minutes on each side until golden brown and crispy. Press gently on the sandwiches to ensure even frying.
Coat the Sandwiches
While the sandwiches are frying, mix ¼ cup granulated sugar with ½ tsp cinnamon in a shallow bowl.
Once the sandwiches are fried, remove them from the oil and immediately coat them in the cinnamon-sugar mixture.
