Method
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix ground beef, breadcrumbs, eggs, onion, garlic, salt, and pepper. Press the mixture into a baking dish.
- Bake for 25-30 minutes until the meatloaf is browned and cooked through.
- Spread mashed potatoes over the cooked meatloaf and top with shredded cheddar cheese.
- Bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
- Let it cool slightly before serving.
