Ingredients
  

  • For the Bang Bang Sauce:
  • 1 ¼ cups 290 g mayonnaise
  • cup 177 g Thai sweet chili sauce
  • 2 tablespoons honey
  • 2 teaspoons Sriracha adjust for spice level
  • For the Chicken:
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • For the Bang Bang Chicken Bowl:
  • 4 cups 744 g prepared white rice, warmed and divided
  • 2 cups 140 g thinly sliced red cabbage
  • 1 large julienned carrot
  • 1 medium cucumber sliced
  • 1 large avocado thinly sliced
  • Fresh cilantro chopped for garnish
  • Sesame seeds for garnish

Method
 

  1. Step 1: Prepare the Bang Bang Sauce
  2. In a medium bowl, combine the mayonnaise, Thai sweet chili sauce, honey, and Sriracha. Stir until fully combined, then set aside. This sauce will give your dish its signature sweet and spicy kick.
  3. Step 2: Season and Cook the Chicken
  4. In a large bowl, mix the vegetable oil, paprika, garlic powder, salt, and pepper.
  5. Add the chicken cubes and gently toss until well coated.
  6. For air fryer cooking, arrange the chicken in a single layer and cook at 400°F (200°C) for 11-12 minutes, flipping halfway through. The chicken should reach an internal temperature of 165°F.
  7. Once cooked, toss the chicken in half a cup of the prepared Bang Bang sauce.
  8. Step 3: Assemble the Bowls
  9. Divide the warm rice among four bowls.
  10. Top each bowl with a portion of red cabbage, carrots, cucumber, and the cooked chicken.
  11. Drizzle with more Bang Bang sauce if desired.
  12. Step 4: Add the Final Touches
  13. Garnish each bowl with thinly sliced avocado, fresh cilantro, and sesame seeds for added flavor and texture.
