Ingredients
• 1 Head of Cauliflower: Cut into bite-sized florets.
• 1 lb Button or Cremini Mushrooms: Cleaned and sliced in half.
• 3 tbsp Unsalted Butter: Melted.
• 4 cloves Garlic: Minced.
• 1 tsp Dried Thyme or Rosemary.
• Fresh Parsley: Chopped, for garnish.
• Salt and Black Pepper: To taste.
Preparation Method
1. Prep the Vegetables: In a large bowl, toss the cauliflower florets and sliced mushrooms together.
2. Make the Garlic Butter: In a small bowl, whisk together the melted butter, minced garlic, and dried herbs.
3. Coat: Pour the garlic butter over the vegetables and toss until everything is evenly coated. Season generously with salt and pepper.
4. Roast: Spread the mixture in a single layer on a large baking sheet. Bake in a preheated oven at 200°C (400°F) for 20–25 minutes, tossing halfway through, until the cauliflower is tender and the edges are golden brown.
5. Serve: Garnish with fresh parsley while hot
