Ingredients
• 1 cup All-purpose flour
• 2 large Eggs
• 1 ½ cups Milk (whole or semi-skimmed)
• 2 tablespoons Melted butter (plus extra for the pan)
• 1 tablespoon Sugar
• A pinch of salt
• Optional: 1 teaspoon vanilla extract
• For filling: Chocolate hazelnut spread (Nutella), crushed nuts, or fruit slices.
Preparation Method
1. Prepare the Batter: In a large bowl, whisk the eggs and flour together. Gradually add the milk and water, stirring constantly to avoid lumps. Add the salt, sugar, melted butter, and vanilla. Whisk until the batter is completely smooth and thin (liquid consistency).
2. Rest the Batter: Let the batter sit for about 15–20 minutes. This helps the bubbles settle and makes the crepes more tender.
3. Cook: Heat a lightly oiled non-stick frying pan over medium heat. Pour or scoop the batter (about ¼ cup) onto the pan. Tilt the pan in a circular motion so the batter coats the surface evenly.
4. Flip: Cook for about 1–2 minutes until the bottom is light brown. Loosen with a spatula, turn, and cook the other side for another 30 seconds.
5. Assemble: Spread a thin layer of chocolate or your preferred filling on the flat crepe. Roll them up tightly as shown in the image and drizzle with more chocolate and crushed nuts for decoration.
